Almond Horchata- Iced Almond Drink

Ingredients

  • 2 cups blanched whole almonds You can buy blanched almonds or boil almonds with the skins for 3 to 5 minutes, drain and rub off the skins.
  • 4 cups cups boiling hot water
  • 2/3 cup sugar or to taste
  • 2 lime zest and juice
  • 4 cups ice plus more for the glasses

Instructions

  1. In a blender combine all the ingredients except ice and let stand in the blender for 5 minutes. Blend mixture on low speed and gradually work up to high speed. blend at high for 3 minutes.
  2. Add ice and blend until melted. Pour mixture through a large sieve, lined with dampened cheesecloth, into a bowl, stirring and discard solids.
  3. Fill 4 tall glasses with ice and the horchata and garnish with cinnamon stick or cinnamon powder, and lime zest.
  4. NOTE: The flavor of the horchata improves if you make it a day in advance.
