Apple Bran Muffins

These muffins are best warm. The smell from these will warm the entire house. They are wonderful and very filling.

Ingredients

  • 1 1/2 cup bran cereal
  • 1 1/4 cup flour
  • 2 tsp baking powder
  • 1/4 tsp cinnamon and ginger and nutmeg
  • 1 tsp 1/2 teaspoon salt
  • 2 eggs (beaten)
  • 1 cup apple juice concentrate
  • 2/3 cup buttermilk

Instructions

  1. Preheat oven to 375 degrees. Lightly grease and flour 12 muffin cups or line with paper liners. 1 teaspoon vanilla 1/2 cup honey 2 apples (peeled, cored, and grated) 3/4 cups each- raisins and walnuts Directions
  2. In a large bowl, soak cereal in apple juice and buttermilk for 5 minutes. Stir in honey, apples, raisins, walnuts, vanilla, egg, In another bowl, sift all the dry ingredients. Lightly fold into the apple bran mixture until moistened, do not over mix.
  3. Evenly distribute among the muffin cups. Bake 20 to 25 minutes.
  4. Variation: Use juice flavors such as mango or pineapple. You can also use other fruit such as mango, or pear.
