Apricot Tart

This is a very fast and easy recipe. I have used pie crust when I did not have any puff pastry and it was great too.

  • 1 sheet puff pastry
  • 1 tsp sugar
  • 3 Tsp raspberry jam
  • 3 apricots (cut into quarters)
  • 1 cup raspberries


  1. Preheat oven to 400 degrees. Sprinkle sugar on each side of the puff pastry and roll it out on a floured surface until it measures 12x12 inches.
  2. Put a cereal bowl upside down on the pastry, by the corner, and cut around it with a knife to make a circle. Repeat with the other corner. You should have 2 circles from 1 sheet of pastry
  3. Place pastry on a cookie sheet and sprinkle lightly with more sugar. Spread raspberry jam evenly over the pastry circle and place apricots around the pastry in a circle, facing the corners in. Place some raspberries in the middle of the pastry.
  4. Roll out the scraps and make cookie size shapes. cover the the jam.
  5. Bake for 15-20 minutes or until pastry starts to turn a golden color.
  6. They taste the best warm! Top with some whip cream or vanilla ice cream.
