Ingredients

  • 3 pounds asparagus cleaned and trimmed
  • 1 onion chopped
  • 1/2 cup celery chopped
  • 1 cup leeks white part only
  • 3 tbsp butter
  • 3 quarts stock
  • 2/3 cup oatmeal
  • salt to taste
  • pepper to taste
  • 2 egg yolks
  • sour cream garnish

Instructions

  1. Wash and trim asparagus. Remove tips and set aside, Remove tough ends and save for making a different vegetable stock. Saute in olive oil the onion, celery, leeks and asparagus. Add stock and cook until tender.
  2. Puree until smooth either in small batches in the blender or with an immersion blender. Return to the soup pot add oatmeal and asparagus tips.
  3. Take about one cup of the warm soup and mix in the egg yolks. When well blended return to soup. Adjust seasoning with salt and pepper. Cook about 5 10 10 minutes over low heat until slightly thickened and the tips are tender.
  4. Garnish with asparagus tips or a little sour cream. This soup is delicious chilled or hot. 

Recipe Notes

You can use this recipe for a vegetable soup base. Just change the asparagus to the vegetable you have at home, carrot, broccoli or whatever you may have.
