Banana Nut Bread or Muffins

This is a wonderful Banana Bread and the muffins are incredible. This is a rich and filling treat. A muffin and a cup of coffee, tea or hot chocolate is a fantastic way to start the day.

Ingredients

  • 1/4 cup low fat sour cream
  • 2 eggs
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup whole wheat flour
  • 1 1/2 cup flour
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 medium orange (zest from 1 orange and all of the juice)
  • 4 small bannanas (mashed and ripe) 1 1/2 cup
  • 1 cup walnuts (chopped)* optional or other nut

Instructions

  1. Preheat oven to 350 degrees. Prepare 18 muffin tins or bread pan with either paper liners or butter or spray oil. *Remove the zest from the orange and mince, then squeeze the orange for all of the juice. Add to the both to the ingredients.
  2. Blend sour cream and sugar. Mix in eggs and beat until light yellow. Add bananas, blending until smooth. In a large bowl sift all the dry ingredients together. Mix with the egg mixture, then add remaining ingredients. Do not over mix, it is ok for a slightly lumpy dough.
  3. Spoon batter into bread pan or muffin tins, 2/3 full. For the bread bake about 1 hour and for the muffins bake about 20 to 25 minutes. Test: Bake until the tops spring back a little and does not feel wet.
  4. *Your can replace bananas for zucchini bread, carrots bread, or other fruits. You can add raisins and nuts if you like. Adjust sugar as desired. * Fill empty muffin cups with water to prevent them from scorching during baking and for even baking.
  5. *Note the bananas in the picture are good bananas, but not ready for muffins, wait a few days and you will see dark spots, The bananas should should be soft and covered with dark spots, plain yellow are not mature and sweet enough.
