Basic Pie Crust

Perfect light and flavorful crust, fast and easy every time.

  • 2 cups flour
  • 1/2 tsp salt
  • 1/4 pound butter 1 stick
  • 5 Tbsp ice water
  • 1 tsp apple cider vinegar
  • 1 tsp sugar for sweet fillings*optional
  • 1 tsp herbs for savory *optional


  1. Sift the flour and salt in a mixing bowl. Add the sugar or herbs. Add butter or shortening working quickly; use a pastry knife, fingertips or food processor to cut in the ingredients until the mixture resembles coarse crumbs. Sprinkle the ice water over the mixture 1 to 2 tablespoon at a time. When you can gather the dough into a ball, you have enough water.
  2. Knead dough 3 minutes on a lightly floured surface. Chill dough 30 minutes to 2 hours. Transfer the dough to a lightly floured surface. Divide the dough in 2 parts. Roll 1 ball of the dough out on a lightly floured surface to form a circle two inches larger than the pie pan. Proceed as described above.
  3. For a precooked pie crust: Roll dough out and place in pie pan. Proceed as described above. Allow crust to cool slightly before using.


  1. •For a single pie crust cut recipe in half or save on half for a latter pie. •Equal amounts of cream cheese may replace butter •Add 2 T sour cream will help make a tender crust. •Replace butter with 3 tbsp shortening for 3 tbsp butter. •Add 1 tsp lemon zest, 1/2 tsp nutmeg, 1 Tbsp lemon juice, up to 3 Tbsp ice water.
