Berry Pie

Summer is the best time to have a berry pie. So good. Great alone or with vanilla ice cream. I love it.

Ingredients

  • 1 double pie crust
  • 1 1/2 cup sugar
  • 6 cup berries (any berry you like)
  • 1 1/2 Tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1 Tbsp lemon juice and the zest from the lemon
  • 2 Tbsp butter

Instructions

  1. Preheat oven to 375 degrees
  2. Filling: Mix sugar, cornstarch, lemon peel and lemon juice and cinnamon in a large bowl. Add berries and toss to combine.

Crust

  1. Roll out 1 dough piece on a lightly floured surface 1 inch larger than the pie pan, place in pie pan. Fill dough with berries. Roll out remaining dough into a 12-inch circle, and cut with a pastry cutter into 1 inch strips. Cover pie with the strips in a lattice pattern, crimp edges decoratively.
  2. Place pie on a cookie sheet and place in the center of the oven. Bake until top is golden brown and juices bubble, about 45 hour. Transfer pie to a rack to cool. Tip: If you place a 2" strip of aluminum foil around the pie rim it will lightly brown but not get over done. Tip: Berry pie can sometimes boil over over and make a mess. Place a piece of foil or parchment under the pie for easy clean up.
