The basic recipe for Biscuits has many different and easy to make variations.  The biscuit recipe also makes wonderful Dumpling. All you do is take a large spoonful of dough and place it on top of simmering soup or stew, cover and cook 10 to 15 minutes. This makes a wonderful dish on a cold winter day.

Biscuits

Tender and light, biscuits are great for breakfast, snacks or any other meal. They are very fast and easy to make.

Ingredients

  • 2 cup 2 cups flour
  • 15 tsp 1/2 teaspoon salt
  • 3 Tbsp 3 tablespoons butter
  • 4 tsp 4 teaspoons baking powder
  • 1 cup milk add more as needed

Instructions

  1. Pre heat oven to 400 degrees. Butter a cake pan or cookie sheet pan. Sift all the dry ingredients in one bowl.
  2. Cut in the butter. To do this you either use a pastry cutter or two knives and break the butter into small pieces into the flour. Do this until it looks like a lumpy cornmeal. Little pieces of butter are alright, they melt in the oven.
  3. With a tablespoon take a scoop of dough and drop into the pan, let the biscuits touch. Bake 10 to 15 minutes until golden brown.
  4. Another method is to gently roll out the dough 1/2 inch thick, using as much flour as needed so they do not stick. Use a biscuit cutter, or a cookie cutter or even a glass to cut your biscuit. Brush the biscuit with some melted butter. Place in your buttered cake pan and bake 10 to 15 minutes until golden brown.

Variations:

  1. Buttermilk (or Sour Cream) Biscuits- Substitute buttermilk or sour cream for the milk. Reduce baking powder to 2 teaspoons and add 1 teaspoon baking soda to the dry ingredients.
  2. Herb Parmesan Biscuits- add 1 cup Parmesan cheese with 1 teaspoon minced fresh herbs (parsley, chives, basil) mix into the dough. Allow the dough to sit one hour to allow the herb flavors to blend. Proceed as before.
  3. Green Onion Sesame Biscuits- Add 3 large green onion, finely minced, and 2 minced garlic cloves, plus 1 teaspoon sesame oil. Proceed as before.
  4. Dumplings- Make any of the biscuit recipes but spoon dough on the top of your favorite soup or stew so they touch. Cover the pan and cook for 10 to 15 minutes. They will be white, and absorb some of the flavor of the soup or stew. Delicious way to complete you stew or soup.
  5. Cheese Biscuits- Add 3/4 cup grated sharp cheddar cheese to the ingredients. Continue as before.
  6. Nut Biscuits- Add 1/2 finely chopped nuts to the dry ingredients. Proceeds as before.
