Black Bean Burrito

Burritos are great all the time. Try them with some green salad for a complete meal or for a lunch or snack as is.

Ingredients

  • 1 black bean salad see our recipe
  • 20 10 inch flour tortillas
  • sour cream
  • salsa

Instructions

  1. Make one batch of the Black Bean Salad. This is the method for folding a burrito, you can make the with a variety of fillings. See our recipe for a breakfast burrito.
  2. Place the filling in the middle of the burrito.
  3. Fold the top and end of the tortilla, encasing the filling.
  4. Roll up the tortilla.
  5. Ready! Now you can eat as is or fry in a little oil until crispy. It is good to make a large batch so that you can freeze some to eat at a later time. Just fry or microwave to heat up the frozen burrito. Great for a lunch or snack.
