Ingredients

  • 15 ounce can black beans rinsed and drained)
  • 1 jalapeno peppers (minced)
  • 2 garlic cloves (minced)
  • 1 small red onion (minced)
  • 1 bay leaf
  • 1/4 cup 1/4 cup cilantro
  • 2 tsp 2 teaspoons oregano
  • 1 tsp 1 teaspoon chili powder
  • 1 tsp 1 teaspoon ground cumin
  • 1 cup salsa verde ( green salsa or red salsa)
  • 5 radishes (minced)
  • 1 red bell pepper (minced)
  • 1/2 cup jack cheese (grated)
  • 1 cup water if needed

Instructions

  1. Rinse beans and place them in a large saucepan, add all the remaining ingredients (except radishes and red bell pepper). Simmer 1/2 hour. Remove bay leaf. *Alternative: Use a can of black beans- 15-ounce size can.
  2. Place cooked beans and remaining ingredients in the food processor and process to form a smooth thick paste. Add salt and pepper to taste. Refrigerate, covered until ready to use.
  3. Add radishes and bell pepper. Pour dip mixture into a serving dish, sprinkle with cheese place in the oven 10 minutes to melt the cheese; add some cilantro and surround with chips or use as a sauce. Serve warm.
