Ingredients

  • 1/3 cup apples vinegar
  • 6 Tbps 6 T fresh lime juice
  • 2 Tbsp olive oil
  • 1 tsp ground cumin
  • 1 Tbsp dijon mustard
  • 1/4 tsp salt and pepper
  • 4 cup cooked black beans
  • 1 red bell pepper (minced) (minced)
  • 1 green bell pepper (minced)
  • 2 1 garlic (minced) (minced)
  • 1 red onion (minced)
  • 1 cup cooked corn

Instructions

  1. In a large bowl whisk vinegar, oil, mustard, garlic, salt and black pepper.
  2. Drain beans, add bell peppers and red onion, and corn, toss well; set aside.
  3. Let salad stand at room temperature of 1 hour before serving. Serve in a half of an avocado, or on a bed of salad greens, or use to make a Black Bean Burrito.
  4. Great taco filling too!
