Breakfast Burrito absolutely delicious and great anytime, not just breakfast.
- 2 tsp Oil
- 1 bell pepper chopped
- 1/2 red onion minced
- 1 to 2 spinach *optional
- 1 cup beans drained
- salt and pepper to taste
- 8 eggs
- 1/3 cup jack cheese grated
- cooking spray
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tomato (diced)
- 1 avacado (cubed)
- hot sauce
Heat oil in a large skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers, about 8 minutes.
Drain the beans, cook until warmed then transfer to a bowl.
Prepare the eggs your favorite way. Grate the cheese
Mix all of the ingredients together. Spoon 1/4 of the mixture in a long shape leave about 1 inch at each end. Fold the shot ends in and roll up.
Heat the burrito in the skillet or microwave Serve one to each person with the various garnished to finish of the burrito.
Fold in the ends of the burrito and roll up tightly.
