Carrot Soup makes a great side dish. Ingredients

  • 4 carrots peeled and julianned or grated
  • 1/2 onion quartered and then cut into slices
  • 1 tsp ginger finely minced peeled fresh ginger
  • 1 garlic clove minced
  • ¼ teaspoon allspice optional
  • ¼ teaspoon turmeric optional
  • 1 celery stick thinly sliced
  • 1 cup mushrooms *sliced, optional
  • 4 cups broth vegetable or chicken broth
  • 1-2 Tbsp Oil
  • 1 Tbsp parsley minced, for garnish
  • 11/2 tsp orange zest the zest from one orange
  • 1 orange juiced
  • salt and pepper to taste

Variation Creamy Carrot Soup

  • large potato, peeled and cubed
  • 1 can coconut milk Half-and-half

Instructions

Carrot Ginger Soup

  1. Saute the onion, ginger and garlic in the oil. Add the celery, mushrooms and the carrots; cook another 5 minutes. Turn all of the cooked vegetables into the broth cook about 5 to10 minutes. Add the orange jusice and zest. Garnish with the parsley. Taste for salt and pepper.

Variation:

  1. Optional: Add any left overs you may like such as, rice, pasta, vegetables or chicken. Also try adding some of the Carrot Sweet Potato Croquettes recipe for a gnocchi version to add to the soup, this is really excellent.

Variation Creamy Carrot Soup

  1. Cook the potato with the rest of the vegetables. When soft puree all of the soup with either a wand blender of a blender or food processor. Add the coconut milk or half and half at the end. Stir gently so that the color of the cream swirls.
