Carrot Cake Waffles or Pancakes are healthy, delicious and make a fantastic breakfast. Carrot Cake Waffles or Pancakes are extra special with the cream cheese topping and warm real maple syrup. The leftover waffles and pancakes are good to freeze and then pop into the toaster for breakfast or a snack. The Cream Cheese Topping is great on toast or in peanut butter sandwiches.

Carrot Cake Waffles or Pan Cakes are healthy and delicious and make a fantastic breakfast. The Waffles or Pancakes are delicious with the cream cheese topping. The leftover waffles are good to freeze and then pop into the toaster for a quick breakfast or a snack.

  • 1 cup carrots finely grated about 4 carrots
  • 2 eggs
  • 4 Tbsp butter melted or coconut oil
  • 1/2 cup brown sugar
  • 2 Tbsp honey
  • 1 cup flour *optional-1/2 whole whear & 1/2 c flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp each cinnamon, ginger, allspice, and nutmeg or 3/4 tsp pumkin pie spice
  • 1/4 tsp salt
  • 1 cup milk or Almond milk or buttermilk
  • 1 tsp vanilla
  • 1/4 cup dried cranberries or raisins or unsweetened grated coconut or a little of each
  • 2 Tbsp walnuts chopped walnuts or pecans , toasted
  • 1/4 cup pineapple * optional- drained

Cream Cheese Topping

  • 8 oz cream cheese
  • 1 tsp vanilla
  • 1/2 cup maple syrup
  • 8 oz can crushed pineapple drained or 3/4 c fresh pineapple
  • 1/4 cup chopped pecan for garnish or walnuts
  • 1 tsp orange zest



  1. Peel and grate the carrots, set aside. Finely grated cook better in this recipe. Cream the eggs, butter, honey and sugar until the sugar is disolved.
  2. Sift remaining dry ingredients together. Add the flour, baking powder, salt, vanilla, and milk; mix well then add the grated carrot and melted butter and egg to the mixture. Fold in pineapple, carrots, coconuts, raisins, and nuts. Check thickness; if you feel it is too thin, add a little more flour or to thick add a little more milk.
  3. Heat griddle or pan to medium heat, and cook waffles or pancakes until they are golden brown. Enjoy them with the cream cheese or a small amount of warm pure maple syrup!

Cream Cheese Topping

  1. Mix softened cream cheese and remaining ingredients together. Form into a ball or rectangular shape and garnish with nuts. Use as an optinal topping for the waffles or for your morning toast..
  2. Another idea is to top with some warm homemade applesauce.
