Chicken and Fruit Salad

Wonderful chicken salad with a store rotisserie chicken. Excellent ideas for a very fast dinner at the end of a long hard day. Great on a hot day when you do not want to cook.

  • 1 cooked chicken (whole or leftovers)
  • 4 cups spinach fresh
  • 2 apples (cored and diced)
  • 2 orange peeled and sectioned)
  • 3/4 pound grapes
  • 1/4 cup chopped nuts
  • 1/3 cup poppy seed salad dressing


  1. Remove and discard skin and bones from chicken; tear chicken into bite-size pieces. Save for later for making chicken broth. Chop slightly spinach leaves. Cut peel from oranges; remove sections with knife. Cut unpeeled apples into 3/4-inch chunks.
  2. In large bowl, combine chicken, chopped spinach, fruit, and salad dressing; toss to coat.
  3. To serve, arrange spinach on platter; spoon chicken salad over spinach leaves. Sprinkle with nuts.add any fruit you may like and use your favorite dressing. *
