Chinese Fried Rice

A delicious way to use leftover rice. Great with a variety of meals or can be a meal in itself. This is not a "real Chinese dish" but is Chinese style.

Ingredients

  • 2 Tbsp peanut oil
  • 2 eggs stirred lightly
  • 2 cups cold rice leftover rice is good
  • 1 small onion chopped
  • 1 bell pepper chopped
  • 3/4 cup mushrooms chopped
  • 1 garlic clove chopped
  • 1/2 cup ham chopped- optional
  • 1 Tbsp soy sauce
  • 4 green onions chopped
  • 1/2 cup peanuts chopped- optional

Instructions

  1. Heat a skillet or wok with oil and stir-fry the egg. When the egg is cooked, remove from the pan. Add a little oil and stir-fry the rice. Cook until completely hot about 5 minutes. Remove and place in a bowl.
  2. Next, saute onion and any vegetables that you would like to add, cook about 5 minutes.Add soy sauce.  Add cooked rice, the eggs, and soy sauce. Garnish with chopped green onions and peanuts.

Variation:

  1. Add cooked chicken, shrimp, ham, or pork loin. All of these meats should be thinly sliced for fast and thorough cooking.
