Brownies are so rich and wonderful.
I am a chocolate lover and this is one of the best. Adding the extra chocolate chips really boosts the flavor. Adding the instant coffee enhances the chocolate flavor. Brownies are a family favorite. This makes a great gift and dessert for a party. You can very easily double this recipe. Everyone likes their brownies either a little gooey or a little more dry like a cake. I tell you how to do both ways. These will disappear quickly. I tell you how to store or freeze the Brownies but it is hard to make enough so that there are any left over to freeze.

- 1/3 cup butter
- 1/4 cup chocolate chips or grated semi sweet chocolate
- 1/4 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1/2 tsp instant coffee *optional, but it sure adds great flavor
- 1/2 tsp baking powder
- 2/3 cup flour
- 1 cup walnuts * optional chopped, or other nut
Preheat the oven to 350 degrees Fahrenheit. Line a 8-inch baking dish with parchment paper on the bottom. Grease all of the baking dish. This will make removing the brownies when done easier.
Melt the butter and chocolate chips on the stove or in the microwave. Remove the from heat. Beat eggs and then add the sugar and beat until light. Mix in the butter, chocolate and vanilla. Sift all dry ingredients together. Add to the liquid mixture. Stir until the dry ingredients they are thoroughly incorporated but. for best results do not over mix. Add the nuts if you are using them. Bake for 25 to 30 minutes.Use a timer, to help you keep track of the time. A brownie is ready when you test with your finger tip and it is soft but not liquid. They get dry when you over bake them.
Once the brownies are completely cool, transfer the brownies to a cutting board. Cut the brownies into 16 or 25 squares. Dust wth powder sugar if desired.
NOTE: *For more dense and fudge-like brownies, cook the brownies a minute or two less. *For more fluffy and cake-like brownies, add another egg. *For less rich brownies, skip the extra chocolate and use the cocoa powder only. These brownies freeze well. Wrap them individually in plastic wrap and then store them in a freezer-safe bag and let them defrost at room temperature.
One favorite way to have your Chocolate Brownie, still a little warm with Vanilla Ice Cream on top.
