Creamy Chocolate Pudding
Creamy Chocolate Pudding is a Chocolate Lover’s dream, such a simple dessert, that is so smooth and rich. The basic ingredients of sugar, cornstarch, milk and semisweet chocolate eggs and are cooked and then finished off with butter and vanilla before chilling. This can be topped with whipped cream or berries. This pudding makes a great filling for Chocolate Cream Pie, cream puffs or in between layers of your favorite cake. You can make this a Parfait by layering the pudding with layers of whip cream, raspberries, and pudding.
Creamy Chocolate Pudding
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups milk or half and half
- 2 tablespoons unsweetened cocoa powder
- 4 ounces semisweet chocolate chopped, good quality chocolate
- 2 eggs
- 2 tablespoons butter
- 2 teaspoons vanilla extract
In a saucepan, combine sugar, cornstarch, and salt. Stir in milk and chocolate. Cook pudding over medium heat, stirring constantly to prevent the bottom from scorching until chocolate melts and sugar dissolves and the mixture thicken. Add eggs. Return to heat and cook 2 minutes more. Remove from heat and stir in butter and vanilla.
Either transfer to a serving bowl or to 4 6-ounce ramekins and press plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 1 hour.
Top with whipped cream and shaved chocolate or berries. The pudding will remain good in the refrigerator for up to 2 days if you can keep your family from eating it all immediately.
Optional: For extra smooth pudding pour cooked pudding through a sieve into a bowl and place in an ice-water bath for a fast setting time.
Cream Puffs are wonderful filled with this chocolate pudding!
