  • 4 Tbsp unsalted butter softened, or vegetable oil
  • 3 small garlic clove minced
  • 1 Tbsp lime zest finely grated
  • 1 Tbsp fresh lime juice
  • salt and pepper to taste
  • 1 1/2 tsp sweet paprika or smoked paprika
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp chipotle powder
  • 1 1/2 tsp oregano
  • 4 boneless rib eye steaks Four 12-ounce, 1-inch thick, or try pork chops
  • Vegetable oil, for the grill
  • your favorite vegetables for the grill

  1. Light a grill or preheat a grill pan. In a small bowl, combine the butter, garlic, lime zest, lime juice and a pinch of salt. In another bowl, combine the paprika, cumin and chipotle powder with 1 1/2 teaspoons of kosher salt. Rub the mixture all over the meat or vegetables.
  2. Oil the grate and grill the steaks or vegetables over moderately high heat, turning once, until slightly charred and medium-rare, about 12 minutes. Transfer the steaks to plates and top with the lime butter. Let the steaks stand for 3 to 4 minutes before serving.
  3. When grilling vegetables it is a good idea to use a grilling basket to keep pieces from falling into the coals.
  4. For fantastic hamburgers add some of the rub and lime butter into the hamburger meat, then grill- excellent!
