- 2 chicken breast (sliced into thin slices)
- 8 ounce beef (sliced into thin slices)
- 10 ounce large shrimp (cleaned)
- 8 ounce fish filet (cut into strips)
- 1 eggplant (cut into strips)
- 1 1/2 Tsbp Oil
- 1/2 tsp cumin (ground)
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp chili powder
- 1 large red onion (cut in slices)
- 1 green bell pepper (cut in slices)
- 1 red bell pepper (cut in slices)
- 1-2 tomatoes (cut in slices)
- 1 package tortillas large flour
- 1 cup sour cream
Place, your choice of- the Chicken, Beef, Fish, Shrimp or egg plant (for vegetarian) strips into a medium bowl. Each different type of chicken, beef, and shrimp needs to be in a separate bowl. Mix marinade together and then rub over strips. Marinate for at least 30 minutes.
Wrap tortillas in either a clean dish towel or foil and heat in the oven. They can be heated in the microwave, using the towel only. Leave wrapped until time to serve.
Heat a large frying pan until hot. Cook until chicken, beef, and shrimp separately until browned and cooked through cook in two batches to prevent crowding in the pan. Transfer the chicken, beef, and shrimp to a bowl and keep hot. Fry lightly the vegetables.
To serve, place a platter with your filling along with the salsa, sour cream and guacamole and tortillas in the middle of the table. Excellent for everyone to make their dinner to their liking.
Note: to complete the meal serve with beans, rice and salad. Provecho!
