This Apple Custard Tart is a beautiful, very elegant and delicious with a vanilla custard and apple swirl topping. Perfect for a special dinner.

Ingredients

Crust

  • 3/4 cup flour
  • 1/2 cup almonds
  • 1 Tbsp sugar
  • 1/4 tsp salt
  • 6 Tbsp cold butter cut into bits
  • 1 1/2 Tbsp water
  • 1/8 tsp almond extract

Filling

  • 2 Tbsp unsalted butter
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 3 cups apples (1lb) peeled cored, sliced
  • 2 Tbsp unsalted butter
  • 1/4 cup flour
  • 1/2 cup cream
  • 2 Tbsp Calvados or brandy
  • 1 inch piece vanilla bean split lengthwise
  • 4 egg yolks
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1/2 cup apricot preserves
  • 3 Tbsp sliced almonds optional

Instructions

Crust

  1. Combine first 4 ingredients in processor and blend until almonds are finely ground. Add butter and process until mixture resembles coarse meal. Combine water and almond extract in small bowl. Add to processor and blend until moist clumps form. Gather dough into ball; flatten ball into disk. Chill 30 minutes.
  2. Roll out dough between sheets of waxed or parchment paper to 12 inch round. Peel off top sheet of paper. Invert dough into a tart pan with removable bottom. Peel off paper. Gently press dough into dish (press with finger to patch any holes). Trim dough, leaving 1/2 inch overhang, using your rolling pin roll over the tart pan, this will cut the crust evenly and quickly. Freeze crust 30 minutes.
  3. Preheat oven to 400 degrees. Line crust with parchment paper. Fill with dried beans or pie weights. Bake until crust is set, about 30 minutes. Remove parchment and beans; continue baking until crust is golden brown, about 10 minutes longer. Cool.

Filling

  1. Reduc oven to 325 degrees. Peel apples, cut into quarters then into slices. Toss in the cinnamon sugar and lemon juice. Melt butter in heavy bottomed large skillet over medium heat. Add apple slices and sauté until tender, about 10 minutes. Using slotted spoon, transfer apples to plate.
  2. Increase heat to medium, add the 2 Tbsp butter, flour and Calvados to skillet and cook until reduced until thick, about 1 minute. Add the cream and stir until blended and all lumps are gone. Scrape seeds from vanilla bean into cream; add bean and heat until it forms bubbles around the pan edge. Remove from the heat just as the cream begins to bubbles around the edge of the pan.
  3. Beat 4 egg yolks with sugar until the color lightens. Gradually, in a steady stream slowly, whisk into hot cream mixture in the saucepan over medium-low heat. Stir over low heat until mixture thickens slightly and coats the back of the spoon, about 6 to 7 minutes; do not boil. Remove from heat.   Constant stirring distributes the heat so the custard doesn't become too hot, which can curdle it. Remove the vanilla bean.
  4. Pour custard into the prebaked crust, arrange apples forming a circular design. Combine preserves and vanilla in a small saucepan. Stir over low heat until melted and smooth. Brush glaze over apples. Sprinkle apples and custard with almonds. Bake until custard is set in center and slightly puffed around edges, about 35 minutes. Cool.
  5. Serve warm or cold with vanilla ice cream or whipped cream. You can also use a pie pan if you do not have a tart pan.
  6. You can clean off the vanilla bean and place it in your sugar bowl to flavor your sugar. It adds a very light flavor to your coffee or tea.
