Glazed Carrots are an easy side dish for any dinner table, from a family gathering or an everyday meal. Almost everyone enjoys carrots.

Ingredients

  • 1 pound carrots
  • 2 Tbsp butter or coconut oil
  • salt and pepper
  • 2 tbsp parsley minced

  1. Clean and peel your carrots. Slice thinly to encourage quick cooking.
  2. In a saucepan add the steamer basket and add the carrots add enough water to just reach the bottom of the steamer with the carrots. When cooked toss in salt, pepper and butter (or coconut oil). If you do not have a steamer, place a few inches of water then combine the carrots, butter, salt and pepper. Bring the water to a boil over moderately high heat, then simmer 6 to 8 minutes. Top with parsley
  3. *Variation: In a large skillet cook 1 Tbsp peeled and finely grated ginger, 3 Tbsp unsalted butter over moderate heat, stirring for 1 minute and 1 Tbsp honey. Add the carrots and cook them, tossing them to coat them with the ginger mixture for 1 to 2 minutes. Season with salt and pepper and top with parsley.

  4. *Variation:  Add some honey mustard to the carrots. Toss and serve.
