Agua de Jamaica (Hibiscus Ice Tea)

Agua de Jamaica is a very popular drink in tropical countries all around the world. Each country has its own special addition from adding nutmeg, cinnamon, ginger, mint and rum. Add what you like, this is one inexpensive drink that is good for you and refreshing too. This is a slightly tart drink, you can add more or less sugar to your taste.

Ingredients

  • 2 cups loose Jamaica or 12 tea bags
  • 6 cups boiling water
  • 1/2 cups sugar or piloncillo (Mexican brown sugar cone)
  • 1 lemon juiced
  • 1/2 tsp whole cloves * optional add to the hot water
  • 1 cinnamon stick * optional add to the hot water
  • 4 cups cold water
  • 1 lemon slices for garnish
  • 1 cups pomegranate juice * optional

Instructions

  1. Place water in a large pan and bring to a boil. Add Hibiscus (jamaica), cinnamon and cloves, bring to a boil. Reduce heat to medium low and simmer until the water has turned deep red, about 30 to 35 minutes.
  2. Add sugar, stir and set aside to cool, about 15 to 20 minutes. Strain the tea (or remove the bags) Pour into a large pitcher. Stir in the juice, lemon juice and cold water.
  3. Refrigerate until cold, about 2 hours or overnight. Serve with ice and lemon wedges, if desired.
