Hummus (Chickpea Dip)

  • 1/2 cup 1/2 cup tahini (sesame paste)
  • 4-6 garlic cloved (minced)
  • 1 tsp cumin
  • 1/2 cup lemon juice
  • 1/2 tsp salt
  • 3 Tbsp hot water
  • 15 ounce can garbanzo beans (drained and rinsed)
  • 1/4 cup 1/4 cup parsley (minced) (minced)
  • 2 Tbsp pine nuts toasted
  • paprika (optional)
  • 1/4 cup mint (minced (optional)) (minced)
  • 2 green onion (minced (optional)) (minced)


  1. In a small bowl, combine tahini, cumin, salt and garlic, while stirring, slowly pour in lemon juice, then hot water.
  2. Puree chickpeas in a blender or food processor, add the tahini and pine nuts to the mixture to puree and mix well. If the paste is to thick add a little water, until it has the consistency of mayonnaise. Taste and add more cumin and salt if desired.
  3. Add the optional tomato, mint, green onion if you want.
  4. Serve with toasted pita bread, baby carrots, celery, jicama, whatever you like.
  5. To toast pita bread: Cut pita into 6 to 8 pieces. Brush with a little olive oil and toast in a 400 degree oven for 5 minutes.
