KIWI SORBET

This is both sweet and tart at the same time. Very refreshing.

Ingredients

  • 1 cup sugar
  • 1/2 cup water
  • 2 pounds kiwis (about 9 large) peeled and diced

Instructions

  1. Bring sugar and 1/2 cup water to boil in heavy small saucepan over medium heat, stirring until sugar dissolves making your simple sugar syrup. Cool
  2. Puree diced kiwi in processor. Set aside 1 cup puree. Strain remaining puree through fine sieve. Combine both purees and syrup in ice cream maker and freeze according to manufacture's instructions. Transfer sorbet to container and freeze.
  3. If you do not have an ice cream maker, pour the mixed juice in a shallow 13x9 baking dish and freeze. Every 15 minutes break up the ice crystals and continue for 2 to 3 hours until the mixture is a thick smooth and frozen sorber. Fantastic dessert.
  4. Variations: Use strawberries or other berries in place of the kiwi.
