Lemon Walnut Scones

Wholesome and delicious. These scones are great any time!

  • 1 cup flour
  • 3/4 cup chopped walnuts
  • 1/4 cup sugar
  • 2/3 cup raisins
  • 1 1/2 Tbsp fresh lemon zest
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 1 egg
  • 6 Tbsp cold butter
  • 2/3 cup whole wheat flour
  • 1/3 cup bran
  • 1 egg yolk *optional (mixed with 1 teaspoon water)


  1. Preheat oven to 400 degrees. Oil or butter sheet pan.
  2. Sift together the dry ingredients into a large bowl. Cut in butter add raisins, bran and nuts.
  3. In a small bowl whisk together the rind, egg and buttermilk. add the mixture to the flour mixture and stir with a fork until it forms a sticky but manageable dough. Knead the dough lightly on a floured surface for 30 seconds and form into a circle about 3/4 inch thick. Cut into 2 inch round circles. From the scraps pat out the dough again and cut once more. Arrange rounds on the baking sheet. Optional: brush the tops with egg and water wash this will make a shiny top.
  4. Bake the scones on the middle shelf in the oven for 15 to 20 minutes or until they are golden.
  5. Serve warm with butter and jam or my favorite lemon curd. Add a big glass of milk or cup of tea or coffee.
