Mango Creamy Cheese Pie

Mango Creamy Cheese Pie Is a rich and creamy pie that is extremely easy to make and you do not need to bake anything!

Cookie Crumb Pie Crust

  • 2 cups cookie crumbs your favorite kind
  • 4 Tbsp shredded coconut
  • 1/4 cup butter or coconut oil

Mango Pie

  • 2 cups mango puree about 2 to 3 mangos
  • 1/2 cup water
  • 1 Tbsp gelatin *Kosher gelatin or Agar-Agar for vegetarians
  • 1 tsp vanilla
  • 8 oz mascarpone cheese or cream cheese
  • 1/4 cup condeneced sweet milk similar to Eagle Brand or Carnation
  • 1 Tbsp lime juice
  • 1 tsp cinnamon
  • 1 pinch salt


Pie Crust

  1. Place all the Pie Crust ingredients in the blender or food processor. Blend until small crumb.
  2. Carefully press crumbs into your pie pan sides and bottom. This is enough for a 9 inch pan but you may not need as much for a smaller dish. Freeze extra for another time.
  3. Freeze the crust while you prepare the filling.

Mango Pie Filling

  1. Disolve gelatin in boiling water. Stir until dissolved. Set aside.
  2. Place all the ingredients in the blender and whirl until smooth, add the gelatin stir one more time.
  3. Pour into pie crust and chill for 3 hours or overnight. Garnish with mango slices and coconut.
