Delicious Mango Salsa with Grilled Salmon is a beautiful colorful dish. It is fast and easy to make and delicious. You can substitute the salmon for any other fish you like. Salmon and mangos are wonderful together with the colors and textures.

Mango Salsa is a wonderful salsa served with chips, or add it to your quesadilla or fish taco. The amount of jalapeno will control the amount of heat this salsa has. Serve it with just about any meal, breakfast eggs, lunch sandwich or dinner on many entries.

Delicious sweet and spicy Mango Salsa

Ingredients

Mango Salsa

  • 1 lg mango peeled, seeded and diced
  • 1/2 red bell pepper chopped
  • 1/2 red onion minced
  • 2 Tbsp lime juice
  • 2 Tbsp cilantro minced
  • 1/2-1 jalapeno finely minced
  • 1/2 tsp salt

Grilled Salmoon

  • 2 tsp coconut oil
  • 2 salmon fillets skin removed or 4 salmon steaks
  • sea salt and pepper

Instructions

Salsa

  1. Stir mango, lime juice, bell pepper, jalapeno, and cilantro together in a bowl. Add salt to taste. Cover the bowl and refrigerate for relish flavors to combine, about 30 minutes.

Grilled Salmon

  1. Season salmon fillets with sea salt and pepper. Heat oil in a large non-stick skillet over medium-high heat until oil begins to smoke.
  2. Place salmon, flesh-side down, in the hot skillet and cook until edges are just starting to Cook through about 2 minutes. Flip fillets, cook two more minutes,
  3. Transfer to a plate and top with chilled mango relish.Serve with a salad and fried rice.
