No Bake Quinoa Chocolate Chip Cookies

Quinoa is packed with protein, fiber and iron. Try these creamy cookies to sneak some of this superfood into your diet. These are great for those on a gluten free diet.

Ingredients

  • 1/2 cup peanut butter
  • 2 Tbsp Applesauce
  • 1/4 cup honey or agave
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/3 cup almond flour If you do not have any, grind almonds until they become flour.
  • 1 1/2 cup quinoa (about 1/2 cup uncooked or soaked)
  • 1/3 cup chocolate chips

Instructions

  1. In a small bowl, combine the peanut butter, applesauce, honey, vanilla and salt. Add the rest of the ingredients and mix until combined. Spoon rounded tablespoons of cookies on a cookie sheet lined with parchment or wax paper, push them down with a measuring cup bottom or a glass bottom so they are about 2 inches round.
  2. Place in the freezer to set, about 20 minutes. Enjoy! No oven needed!!!
