- 3 eggs
- 2 cup sifted flour you may need to add a little more
- 3 teaspoons baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 11/2 cup milk
- 2 tablespoons melted butter
- cooking oil
In a large bowl beat eggs until light and fluffy, about 2 minutes. Add dry ingredients. Gently add milk and butter.
Heat skillet or griddle. To test if it is ready drop a little cold water drops on the skillet, water should roll of in drops. Have it at medium heat, high heat you will end up with a raw doughy pan cake middle.
Add a little oil to the pan. Use a ¼ cup or a large spoon, for the batter, for each pancake. When the pancake starts to bubbles start to pop it is time to turn over. Perfect! Enjoy!
Makes about 8 4 inch pancakes.
VARIATIONS: Apple pancakes: Add 1 cup thinly sliced apples to the batter. Cook as before. Top with applesauce.
Banana Pancakes: Sift 1/8 teaspoon nutmeg with the pancake dry ingredients. Add to batter 1 cup mashed banana and 2 teaspoons lemon juice; cook as above. Serve with whipped butter and Hot Maple Syrup.
Honey Spiced Pancakes: Add ¾ teaspoon cinnamon, ¼ teaspoon ginger and 1/8 teaspoon nutmeg into the dry ingredients. Add to the batter ½ cup uncooked oats, and 2 tablespoons honey, add a little more milk as needed cook as above.
Pecan Pancakes: Add ½ cup chopped pecans and proceed as before.
Animal Pancakes: Place cookie cutters on the pan and fill with the batter.
Drain blueberry liquid into a small saucepan. Bring to a boil. Add sugar or honey. Bring to a boil. Reduce heat and simmer 10 minutes. Add berries and serve.
Drain strawberries, reserving liquids. In a medium saucepan combine 1 tablespoon berry liquid with cornstarch. Stir until smooth. Add remaining liquid, the berries and lemon juice; bring to boil. Sauce will thicken as it heats. Serve warm
