Parmesan Chicken Strips

Just about everyone likes Chicken Strips. These are fast and delicious. They still taste good cold so they are great for a picnic or lunch.

Ingredients

  • 1/2 cup corn flakes (crushed) or panko flakes
  • 1/4 cup Parmesan cheese
  • 1/2 pound chicken breast skinless, boneless,(cut into 1 to 1 1/2 inch wide strips)
  • salt and pepper to taste
  • 1 egg (beaten)
  • 3 Tbsp Oil

Instructions

  1. Combine cornflakes and parmesan. Season chicken with salt and pepper.
  2. Dip in egg, cover the chicken piece completely. Roll in the cornflakes, shake off excess corn flakes (or panko). Cook chicken in oil in a hot skillet until golden, 6 minutes.
  3. Serve with your favorite barbeque sauce or other sauce.
