Sorbet is a mixture of fruit, sugar, and water that is churned and frozen in an ice cream maker or stirred and frozen in a shallow dish. Finished sorbet a smooth, yet dense texture. Sorbet sometimes may also include a small amount of alcohol, which improves the texture of the finished product. The alcohol lowers the freezing point of a mixture, so the sorbet stays a little softer when stored in the freezer.

Peach Sorbet

This is the taste of summer to me. Ripe peaches are so good and sweet.
Servings 6 cups

  • 4 cup peeled peaches or you can use frozen peaches
  • 3/4 cup sugar
  • 1/2 cup Sauternes or other sweet white wine


  1. Place peaches and sugar in a food processor. Add wine, and process until smooth. Pour the mixture into the freezer can of an ice cream freezer, and freeze according to manufacturer's instructions.


  1. You can substitute with Nectarines, Mangos or apricots, wonderful!
