  • 16 ounce confectioners' sugar (powdered sugar) (sifted)
  • 1 cup creamy style peanut butter
  • 1/4 cup butter
  • 1 Tbsp milk
  • 8 ounce semisweet chocolate chips
  • 1 Tbsp butter

  1. In a mixing bowl, combine peanut butter, butter and then add confectioners' sugar, add milk only if needed for extra moisture, until blended. If the mixture becomes warm, chill for 10 minutes. Shape the mixture, with the help of a teaspoon and your hands, into several teaspoon-size eggs, and place on parchment paper or waxed paper. Either freeze eggs for 1 hour or refrigerate until very cold.
  2. While the eggs are chilling, cut semi-sweet chocolate into small pieces and place in the top of double boiler with butter. Melt chocolate over medium heat, frequently stirring until smooth. Stick a long-tined fork or bamboo skewer on top of each peanut butter egg, dip it in melted chocolate to cover, then allow excess to drain off and place on parchment or waxed paper.
  3. When the candy eggs are cooled and set, they are ready. If you want to decorate the eggs, drizzle with extra melted white chocolate, or sprinkle candy sprinkles or nuts.
