Pear, Spinach and Toasted Pecan Dinner Salad

These dark green greens look so good in salad and taste so good too.

Ingredients

  • 3 pears Aisan or Bosc peeled, halved and cored
  • 1 fresh lemon juice
  • 1 shallots minced
  • 1 red onion thinly sliced
  • salt and pepper to taste
  • 1/2 cup toasted pecan
  • 2 pounds spinach or Mesclun mix
  • goat cheese crumbled

Salad Dressing

  • 3 Tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1/2 cup olive oil extra virgin
  • 2 ounces goat cheese optional

Instructions

  1. Slice the pears and toss them with the lemon juice to keep them from turning brown. Toast the pecans and while toasting add a little sugar so that the pecans are caramelized, in you want. Thinly slice the red onion.
  2. Place the spinach (or salad greens), pears, pecans and red onion in a large bowl. Make the salad dressing. Toss on the salad just before serving. Top with crumbled goat cheese, optional.
