Pecan Peach Muffins

Wonderful muffins. When mangoes are in season I use mangoes, similar in texture but a different flavor. Muffins are good for breakfast or with your lunch.

Ingredients

  • 1/2 cup sour cream
  • 1 3/4 cup flour
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup peach preserves or fresh peach or mango slices
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 nutmeg
  • 2/3 cup pecans (roughly chopped and toasted)

Instructions

  1. Preheat oven to 350 degrees. Line 12 muffin pan with muffin papers or butter the muffin pan. Directions
  2. Sift the dry ingredients into a large bowl. Whisk sour cream wet ingredients with the pecans into the dry ingredients. Stir just until combined, do not over mix.
  3. Divide batter among the muffin cups. Bake until tester inserted into the center of muffin comes out clean, about 20 minutes. Cool, about about 15 minutes. Serve still warm or latter cold.
