Raisin Bran Muffins

Bake and then freeze any extras you do not need for now. Microwave or toast to warm up another time.

Ingredients

  • 4 Tbs butter
  • 1 cup milk
  • 1/4 cup molasses
  • 1 egg
  • 1/2 cup brown sugar
  • 3/4 cup raisons
  • 3 cup wheat bran cereal
  • 1 tsp cinnamon
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla
  • 1 cup flour
  • 1/4 cup dried fruit or nuts

Instructions

  1. Pre heat oven to 400 degrees. Grease 12 muffin cups or line with paper liners.
  2. In a medium combine milk, raisins, egg, molasses and vanilla. Sift and combine dry ingredients, into a large bowl. Fold in the wet ingredients. Mix until blended, do not over mix.
  3. Spoon into muffin cups. Bake for 20 minutes. Remove and let cool slightly, serve warm or cold.
  4. You can also bake the mix in a bread pan for a bread. Great with butter and jam.
