Ingredients

Marinade:

  • 1/2 c red wine
  • 4 T fresh lemon ejuic
  • 1 t fresh thyme
  • 2 crushed garlic cloves
  • 2 bay leaves
  • 10 black pepper corns, crushed
  • 2 T olive oil
  • 3 lbs. boneless lean lamb, cut into 1 inch cubes
  • a sprig of rosemary
  • freshly ground pepper
  • 18 cherry tomatoes, pearl onions and mushrooms

Instructions

  1. In a glass bowl combine marinade; add the lamb and let it marinate, covered, at room temperature for at least 1 hour or chilled 12 to 24 hours overnight.
  2. In a shallow dish soak wooden skewers in water for 30 minutes. Tread the lamb and vegetables on the skewers, reserving the marinade.
  3. Grill the lamb over glowing coals, turning it and basting it with the rosemary sprig dipped in the reserved marinade, for 8 to 10 minutes for medium rare meat. Or broil the lamb in the broiler, basting it with the marinade and turning often, for 15 to 20 minutes. Before serving sprinkle the lamb with salt and a liberal amount of pepper.
  4. If you prefer chicken or beef can replace the lamb.
