South African Bobotie is a fantastic casserole that is one more easy to make and full of great flavor.

South African Bobotie

This is an excellent intermediate level recipe. If you would like to cook one half now and place the other half in a prepared dish and freeze for a different dinner.

Ingredients

  • 2 Tbsp oil
  • 2 mediun onions (minced)
  • 11/2 lb ground beef
  • 12 cups milk
  • 5-6 slices bread
  • 1/2 cup raisins
  • 1 tsp apricot jam
  • 1 Tbsp hot chutney
  • 1/2 Tbsp curry
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp turmeric
  • 2 Tbsp apple cider vinegar
  • 1 egg
  • 1 bayleaf

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  2.  Heat the oil in a large skillet over medium-high heat. Cook the onions in the hot oil until soft. Break the ground beef into the skillet and cook until brown. Place the milk in a shallow dish. Soak the bread in the milk. Squeeze the excess milk from the bread. Set the milk aside. Add the bread to the beef mixture. Stir in the raisins, apricot jam, chutney, curry powder, salt, and black pepper. Pour the mixture into the prepared baking dish. 

  3. Place the filled baking dish into a bain marie or into a pan larger than the baking dish filled with hot water. After the bobotie bakes about 20 minutes, whisk together the reserved milk, egg, and a pinch of salt. Pour over top of the dish.

  4. Lay the bay leaf onto the top of the milk mixture. Bake for another 30 to 40 minutes until the custard is set and lightly browned. Remove bay leaf before serving. 

  5. Traditionally served with Yellow Rice and chutney.
