Split-Pea Soup

Rich and delicious soup. This can make a full meal with bread and salad or as part of a full meal.

  • 1 Tbsp olive oil
  • 1 1 onion (chopped)
  • 2 garlic cloves (chopped)
  • 4 carrots (chopped)
  • 3 celery stalks (chopped)
  • 1 1 bay leaf
  • 1 tsp thyme
  • 16 ounce bag split peas (picked over and rinsed clean)
  • 4-6 broth or water or combination of both
  • salt and pepper to taste
  • 1 ham hock or pieces of ham (optional or salt pork)
  • 2 Tbsp butter * optional
  • cream *optional


  1. In a large pot with a lid, heat oil over medium. Add onion, garlic carrots, and celery, season with salt and pepper. Cook until vegetables begin to soften, 5 to 8 minutes.
  2. Add broth and 5 cups water (or about 6 cups water only) split peas, ham bone, and and herbs. Bring to a boil, reduce heat to medium-low, and partially cover; simmer until peas are soft, 40 to 50 minutes.
  3. If you use a slow cooker, set at low and cook for 2 to 3 hours.
  4. Remove bay leaf and discard bone (save the ham pieces and add to the soup) from the soup. If necessary, thin with water. Add butter, salt and pepper, and lemon juice to taste or a little cream on the top of the soup at the time of serving.
  5. Serve with some French Bread and Salad.
