Strawberry Cheesecake French Toast



This is a special French Toast. It is easy and tastes very special – perfect for a breakfast or dessert. You can increase the recipe easily to serve as a dish at a Brunch or Pot Luck. If you want to use sliced peaches or other berries or other fruit, it works just as well.


Strawberry Cheesecake French Toast

This is a very special French Toast, perfect for a breakfast birthday or special day. This makes a great dessert also.

  • 1 cup Ricotta Cheese skimmed or regular
  • 8 ounces mascarpone or cream cheese
  • 1 tsp cinnamon
  • 3 tbsp sugar
  • 1 tsp vanilla
  • 12 slices bread 1/3 inch thick slices, day old is best
  • 4 eggs beaten
  • 1 cup milk
  • 2-3 cups strawberries sliced
  • 2 tbsp sugar
  • 4 tbs butter or cooking oil spray
  • berry syrup if desired
  • 1 -1/2 cups almond slices


  1. In a bowl, stir ricotta, mascarpone, cinnamon, sugar and vanilla until smooth.
  2. Slice strawberries and sprinkle with sugar.
  3. Spread one side of the bread slices with ricotta add some berry slices; top with remaining bread. In a bowl, beat eggs and milk to blend. Place "sandwich" in the egg mixture for about 20 seconds per side.
  4. Place skillet over medium-high heat. Add butter or spray with cooking oil spray. Dip ricotta sandwiches in egg mixture; place these "sandwiches" in skillet. Then dip into the almond slices. Cook, turning until deep golden and firm to touch, about 5 minutes per side
  5. Keep warm while cooking remaining toast. *If you want you may prepare ahead of time to this point and then warm in the oven to serve latter. Add strawberry slices to the warmed french toast and top toast with berry syrup.
  6. Note: Day old bread sliced 1/2 inch thick or Hallah, Soft French or Italian breads or pound cake works best.

Second method

  1. Dip the bread as before in the mixed egg, but place it in a baking dish. Cover with the cheese mixture and a layer of berries, then top with another layer of the "egg bread". Top with almonds. Bake at 350 about 20 to 25 minutes. This is an easy way to serve this dish for a little larger group easily. This way it becomes a little more like a bread pudding.Top with yogurt or ice cream if you have this for desert.
