Tabouli Salad

Tabouli Salad is a simple Mediterranean/Middle Eastern salad of very finely chopped vegetables, lots of fresh parsley, mint, and bulgur wheat, all tossed with lime juice and olive oil.   There are two kinds of bulgur: fine or coarse, and for Tabouli I use coarse. If you use the fine bulgar you do not need to allow the bulgur to sit in the hot water first. It will absorb the liquids of the salad. I prefer the coarse bulgur because I prefer the texture more. This is a great salad when you go on a picnic because it has nothing to wilt or quickly spoil, like mayonnaise.



This salad is full of flavor and is a great side dish for most meals. Wonderful dish for a picnic.

  • 3 medium tomatoes chopped or cherry tomatoes cut in half
  • 1 cup bulgur
  • 1 cup boiling water or broth
  • 1/2 cup lemon juice
  • 3 Tbsp olive oil
  • 1 cup parsley minced
  • 1/2 cup 1/2 cup mint minced
  • 1 green bell pepper minced
  • 1 small red onion minced
  • salt and pepper to taste
  • 2 garlic cloves minced
  • 1 cucumber chopped


  1. Rinse the bulgur several times, combine with 1 cup boiling water, lemon juice, and olive oil. Let sit for about 20 minutes or until the bulgar is tender.

  2. Combine all ingredients. Toss well, refrigerate at least 1 hour so the flavors blend or overnight.

  3. Serve as a salad or side dish.

Recipe Notes

This is a fast dish with the help of a food processor.  Be careful to only pulse the ingredients or they will become mush. I use this basic recipe but sometimes use leftover rice instead, really good.
