  • 3/4 cups sugar
  • 2 Tbsp cornstarch
  • 1/8 tsp salt
  • 2 cups milk
  • 2 egg yolks
  • 2 Tbsp butter
  • 1 tsp vanilla
  • 4 bananas (*for banana pudding)

  1. In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
  2. Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
  3. Pour pudding into dessert dishes. Cover with plastic wrap and refrigerate about 1 hour or until chilled. If you do not cover the pudding it will get a little film on the top. This is not bad but is best without the film. Store covered in the refrigerator.
  4. Banana Pudding- Slice bananas and gently stir into finished pudding. Cover and refrigerate as before.
